Turns out this breakfast isn’t actually Welsh….and isn’t supposed to look like this. Not sure what I did wrong…but it might have been the cheese?
Cooks 1 to 2 hours and 1/2 depending on crock pot. Serves between 8-12 people.
What you’ll need:
12 oz. beer
1 Tbsp. dry mustard
1 tsp Worcestershire sauce
1/2 tsp salt
1/8 tsp. pepper
1 lb. Smoked gouda cheese
1 lb. Smoked cheddar cheese
pack of English muffins
Bacon slices, cooked the way you like them. (We used beef bacon from the grass-fed beef farm!)
Sliced tomato
How to Make it:Β
1. Bring salt, pepper, Worcestershire sauce and beer to a boil in crock pot on HIGH setting, covered. However long it takes to boil– 1 or 2 hours depending on your crock pot. When it boils, you’re ready for the cheese.
2. Add the cheese, a bit at a time, until it all melts. Stir constantly.
3. Heat an additional 1/2 hour, stirring often to insure it’s melted properly.
4. Pour cheesy mixture over English muffin and top with slice of bacon and tomato. Serve with juice and fresh fruit on the back porch preferably for brunch or like we did—onΒ a chilly night by the fire pit in the back yard.
End Result:
My cheese never melted and never appeared creamy like so many of the other recipe pictures online. Maybe because I used a smoked variety of cheese? Not sure, but it was a visual disaster. It resembled crumbly scrambled eggs in liquid. It looked disgusting, so we were a bit hesitant taking our first bites. But can you ever seriously go wrong with cheese? It tasted great. It made entirely too much so I stashed half the mixture in the freezer and it patiently awaits its next chance when we buy more of its brother, bacon. Disheartened, I don’t think I’ll ever try it again.

It could be that the cheese was not a great melting variety. It would probably help to grate the cheese instead of trying to melt it in chunks. Also, if you boiled the rarebit after the cheese was incorporated, that might make it separate. Glad the flavor was good, though. I agree–it’s hard to go wrong with cheese.
Rivertree kitchen, I didn’t know some cheeses melt better than others. I thought all cheese melted equally! π
Good point about the grating. AND the boiling afterward. Maybe I won’t give up just yet. I might try it ONE MORE time…but only because Matt liked it so much! π
Well I thought this was delicious and I’m looking forward to eating the rest that’s in the freezer!! Somebody decided to hide it from me. π We used beef bacon as well, I’m making my mouth water just thinking about this dish. My wife is such a terrific cook, nothing she cooks ever goes uneaten!!

Ah, now that’s true love… I agree with Rivertree Kitchen, must have been something with the particular cheese you were using. It looks like you added chucks… maybe next time try grating the cheese and then whisking it in : )

Awww….thanks. That is true. The more you do anything, the better you get at it. I never really thought about that. I always expect it to come out perfect the first time. That isn’t very realistic or healthy. Thanks for putting it into perspective for me.
