Growing up, mama used to always put spaghetti in the chili. From rural Kentucky, she grew up eating it this way. I always thought it was because mama grew up poor and the spaghetti made the chili go farther with her six brothers and sisters.

Maybe.

But I’ve found a few other places sell it like this. Including Sky Line Chili. Maybe it wasn’t something my creative cooker of a grandmother created, after all. (This wasn’t the mean grandmother, this was the one who spoke like a sailor.)

I had a few cans of Carnation 2% milk to use up. I plugged “carnation recipes” into Google and found Shepherd’s Pie. Hey, I always wanted to try making that!

Note: Mashed potatoes are needed + filling.  I cooked the mashed potatoes in the crock pot the day before, but feel free to cook on stove top or use store-bought to save time.

I’d heard of this before, but it was one of those meals that sounded complicated and mysterious. I had no inkling of how to make it. What a surprise to find it only took a few minutes to throw this in the crock pot. (Mostly because I cheated and used pre-cubed meat.) The best part? I utilized a much cheaper cut of meat because it cooked all day. As I busied myself around the house, the smell wafted through each room. And the first words out of my man’s mouth when he arrived home? “That smells good.”

My man is the Italian fan. I find Italian food fattening–full of cheese and bread. Not saying it isn’t scrumptious, but it doesn’t do my hips any favors. I usually do low-fat, but this time, I thought I’d go all out. And wow. I have officially been converted!

You betcha!
Think about it…what’s the the tricky part about pizza in a crock pot? The dough. So, what if you replaced the crust with pasta instead. It’s just another type of starch, really. And believe you me. It is JUST as good as pizza! This was EXCELLENT! And EASY!

The ingredients in these sounded so nutritious! This would be a GREAT recipe to make with kids. Tiny hands would have no problem with the folding and arranging and scooping. It takes a bit of pre-work, but they were delicious and filling and worth it!

Served with a side of fresh cabbage sprinkled with salt.

I almost burnt dinner. I almost cooked it to dinner death. I’d never made cacciatore before. It sounded very Italian and very difficult, but when I looked at the ingredients, I had everything but the chicken breasts and a few canned items. Well, hey! I can do this! I didn’t anticipate getting locked out of the house and overcooking the chicken. But I’ll let you read that in the end results.
