While we were in the hotel, I had no way to make eggs. Then I thought of the crock pot. Why not? I looked it up on-line and sure enough, it had been tried before. The first time I cooked them too long and they were a real pain to peel. It took me two times to get it perfect, but I did!

Turns out this breakfast isn’t actually Welsh….and isn’t supposed to look like this. Not sure what I did wrong…but it might have been the cheese?
Irish oatmeal

My new friend, Peggy, says to me,”Oh, you use your crock pot, do ya? Have you tried making Irish oats in it yet?”
“I didn’t know you could make oatmeal in the crock pot,” I answer.
“Oh, yeah. Who wants to stand there stirring the milk all day waiting for it to warm up?” Peggy is the only person I’ve ever met who also complains about how long it takes milk to warm on the stove in order to make oatmeal. “Try it,” she says. “You’ll never go back.”
First off, I thought I must be the only person in the universe who makes oatmeal with milk. Every time I tell someone I do, they look at me like I have nine heads. That’s how my mama made it.
This was so good, I didn’t even want to share it.
Now that’s good food. And I owe it all to Peggy.
