I had a few cans of Carnation 2% milk to use up. I plugged “carnation recipes” into Google and found Shepherd’s Pie. Hey, I always wanted to try making that!
Note: Mashed potatoes are needed + filling. I cooked the mashed potatoes in the crock pot the day before, but feel free to cook on stove top or use store-bought to save time.
Cooks 5 to 8 hours on LOW (if using ready-made potatoes); serves eight.
I used the recipe off the carnation milk site but threw it all in the crock pot. Click the carnation link if you’d like to try the original recipe cooked in the oven.
Ingredients for mashed Potatoes:
6 large peeled and quartered potatoes
1 can Carnation 2% Evaporated Milk
3 tablespoons olive oil
1 teaspoon salt
1/4 teaspoon pepper
How to cook the mashed potatoes in crock pot:
1. Cut potatoes in quarters; leave skins on.
2. Place in crock pot.
3. Cover potatoes with water and sprinkle in a bit of salt.
4. Cover and cook 5 hours on HIGH or until potatoes are soft.
5. Pour potatoes and hot water into colander–BE CAREFUL OF STEAM BURNS!
6. Return potatoes to crock pot; mash with fork.
7. Add 1 cup evaporated milk, olive oil, salt and pepper and stir well.
Ingredients for filling:
1 and 1/2 lb lean ground beef
1 large onion, chopped
2 garlic cloves, minced
1 green pepper, chopped
2 cups frozen mixed veggies
1 tablespoon Worcestershire sauce
1 teaspoon salt
1 teaspoon dried thyme
1/2 teaspoon pepper
1/3 cup ketchup
How to cook filling:
1. Brown beef in large skillet over medium heat.
2. Drain fat.
3. Add onion, garlic, pepper, remaining evaporated milk, frozen veggies, ketchup, spices and stir.
4. Place in crock pot and cook on LOW for 5 to 8 hours until peppers are soft.
5. Spread mashed potatoes over filling last two hours.
End Result:
Just as good as any restaurant Shepard’s Pie. Every time we stopped in an Irish pub and ordered this, I ALWAYS said, “I could make this!” I was right!!
