The old me would say, “I can’t even pronounce it, there’s no way I can cook it.” The new me says, “Try anything.” (IN THE CROCK POT!) Turned out beautiful, colorful and highly nutritious. I had some fresh green beans that were about to go, so as my grandmother (the one who wasn’t a fabulous cook but did raise and feed 7 children) would say, “Throw it in there. No need to waste.”

I had a few cans of Carnation 2% milk to use up. I plugged “carnation recipes” into Google and found Shepherd’s Pie. Hey, I always wanted to try making that!

Note: Mashed potatoes are needed + filling.  I cooked the mashed potatoes in the crock pot the day before, but feel free to cook on stove top or use store-bought to save time.

Say, whaaat? Why would you need to use the crock pot when you could cook these in 15 to 20 minutes on the stove top? I tried these when we were living in the hotel and had no stove top, but it would also work during the holidays to free up that stove top for other things.IMG_6726 (more…)

Homemade mashed potatoes intimidated me. They seemed time-consuming and tricky, something I wasn’t capable of making. Boy, was I wrong!
This takes very little effort for an end reward.

I spotted the cutest little turkey in the freezer section at the grocery. Turns out, it’s just a turkey breast. Perfect idea for a small family dinner. I had no idea how to cook it so I bought chicken broth. Every other meat I’d ever cooked in the crock pot turned out tender if I cooked it in juice….so it was worth a try!

While we were in the hotel, I had no way to make eggs. Then I thought of the crock pot. Why not? I looked it up on-line and sure enough, it had been tried before. The first time I cooked them too long and they were a real pain to peel. It took me two times to get it perfect, but I did!

I almost ate it all without taking a picture and remembered at the last bite!
