What started out as blueberry muffins got a little out of control. I had so much left over, I turned it into a coffee cake. My very first one thanks to the cake pan Kay gave me. (Thanks Kay!) Made with oatmeal, oat bran, wheat flour and agave syrup, there is no need to feel much guilt with this one!

My new friend, Peggy, says to me,”Oh, you use your crock pot, do ya? Have you tried making Irish oats in it yet?”

“I didn’t know you could make oatmeal in the crock pot,” I answer.

“Oh, yeah. Who wants to stand there stirring the milk all day waiting for it to warm up?” Peggy is the only person I’ve ever met who also complains about how long it takes milk to warm on the stove in order to make oatmeal. “Try it,” she says. “You’ll never go back.”

First off, I thought I must be the only person in the universe who makes oatmeal with milk. Every time I tell someone I do, they look at me like I have nine heads. That’s how my mama made it.

This was so good, I didn’t even want to share it.

Now that’s good food. And I owe it all to Peggy.

So creamy.
