I didn’t even do a post about thanking all the soldiers and men and women who have sacrified for our country on Memorial Day. I was swimming in garden. And I am very thankful for the fact that I am able to do that.

House hunting = living in a hotel presently. Without a kitchen, I’m finding my creative chord so there’s no need to constantly eat out.
Crock pot meals to the rescue!

I planted my fall garden in the back yard today. Well, I planted my collard greens anyway.

I almost burnt dinner. I almost cooked it to dinner death. I’d never made cacciatore before. It sounded very Italian and very difficult, but when I looked at the ingredients, I had everything but the chicken breasts and a few canned items. Well, hey! I can do this! I didn’t anticipate getting locked out of the house and overcooking the chicken. But I’ll let you read that in the end results.

Thrown together at my brother-in-law’s house the morning we moved in, I swiped his crock pot for a couple of days. During all the confusion and unpacking of our latest military move, the crock pot meal was a God-send. Even one of the movers leaned in and smelled, trying not to lift the lid.
“You know ma’am, it smells so good, I just have to ask. What are you cooking in there?”
We found make-shift bowls and used plastic spoons I’d kept from a fast food restaurant for future camping trips! Unfortunately amid all the unpacking, I forgot to take a picture of the final product. But the fact it so quickly disappeared is proof of how delicious it was.
This one always turns out creamy and hearty. The green chiles give it just the right amount of tangy bite. It’s the ultimate comfort food. For me anyway! Makes me wish I was from Louisiana…..

Years ago, as a missile field cook, a military cop made a request for chicken cordon bleu. He explained it was easy to make on the grill, but could have been speaking Greek for all I knew. I tried to follow his directions and when I delivered it on the plate, he smiled. It wasn’t perfect, but it made the cops happy when we tried to accommodate their requests.
