Homemade mashed potatoes intimidated me. They seemed time-consuming and tricky, something I wasn’t capable of making. Boy, was I wrong!
This takes very little effort for an end reward.
Cooks 3 to 5 hours on HIGH depending on crock pot or UNTIL POTATOES ARE SOFT; serves about five to eight
Note: I read if you soak the potatoes overnight in water, it lowers the starch content and creamier potatoes will result. I tried it but couldn’t tell a difference.
What you’ll need:
6 large potatoes, washed
1 can 2% evaporated milk
3 tablespoons olive oil
water
salt
How to cook them:
1. Cut potatoes in quarters; leave skins on.
2. Place in crock pot.
3. Cover potatoes with water and sprinkle in a bit of salt.
4. Cover and cook 5 hours on HIGH or until potatoes are soft.
5. Pour potatoes and hot water into colander–BE CAREFUL OF STEAM BURNS!
6. Return potatoes to crock pot; mash with fork.
7. Add 1 cup evaporated milk, olive oil, salt and pepper and stir well.
End Result:
Homemade creamy mashed potatoes just like grandma used to make!
