I’ve attempted cooking with lentils various times but they always come out tasting….well….tasteless. This time I cooked it using various frozen, cooked and fresh vegetables with different spices. My husband inhaled it!
Cooks 5 hours. Serves about 10-12. Great for a party, pot-luck or reunion. Feel free to use any veggies you have in any variety. You can clean out the fridge if you want! Have fun with it.
What you’ll need:
2 cups lentils
1 cup brown rice
1 and 1/4 cups homemade salsa
1 can condensed tomato soup + 1 can water
1 and 1/2 cup grape tomatoes
1 diced jalapeno pepper (add seeds if you like it hot)
2 medium diced potatoes, any variety
2 large sliced carrots
1/2 chopped red pepper
1/2 chopped green pepper
5 minced garlic cloves
1 large chopped onion
1 14 oz. package frozen peas
1 and 1/2 cups cooked black eye peas (or about two cans)
3 bay leaves
2 tablespoons curry powder
1 teaspoon salt
1 teaspoon pepper
1 teaspoon cumin
5 teaspoons vegetable Better than Bouillon dissolved in 5 cups hot water
How to cook it:
1. Slice and dice your veggies.
2. Throw it all in the crock pot.
3. Cover and cook 3 hours on HIGH.
4. Stir and cook an additional 2 hours on LOW, depending on crock pot.
(When lentils are soft and brown rice is no longer chewy, it’s ready.)
End Result:
Filling and flavorful. Best served topped with Colby/Monterey jack cheese with a hunk of crusty brown bread or a handful of your favorite crackers. Freezes well. I’ll pull half of this dish out of the freezer in a couple of weeks and have a quick, ready-made meal. Ta-dah!

Glad to see you are still trying lentils in the crock pot and now producing meals hubby will eat.
gosh… I have a jar of lentils and I have no idea how to use it.
I made a soup once, but it was not really good.

@Alison—I haven’t given up yet! But, I can’t complain. The man will eat anything I make and tell me it tastes delicious. He might be sent from heaven.
@ Ewa—I have found lentils to be the hardest things to make. They always turn out tasteless, but these were flavorful. They were a bit spicy! Ask Alison. She’s great with lentils.
