What started out as blueberry muffins got a little out of control. I had so much left over, I turned it into a coffee cake. My very first one thanks to the cake pan Kay gave me. (Thanks Kay!) Made with oatmeal, oat bran, wheat flour and agave syrup, there is no need to feel much guilt with this one!
What you’ll need:
1 and 1/4 regular oatmeal
1 cup whole wheat flour
1/2 cup oat bran cereal
1/3 agave syrup
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk
1 egg
1/4 olive oil
2 cups fresh, organic blueberries
3 strawberries (Pretty random, eh? Just because I needed to get rid of them.)

How to make it:
1. Combine oats, flour, oat bran, agave syrup, baking power and salt.
2. Mix in milk, egg and oil just until dry ingredients are wet.
3. Add blueberries and strawberries.
4. Fill greased muffin cups 3/4 full or small cake pan less than halfway full.
5. Bake at 435 degrees F for 25 minutes. (Depending on stove. Turn that light on and check!)

End Result:
Moist, flavorful and delicious. A perfect dessert or breakfast with milk. “A party in my mouth,” said the husband.

i make it easy on myself by mixing all dry ingredients in one bowl and all wet ones in another, then transfer the dry in the other, with a fork so as to retain some textural interest.
