Rice in the crock pot? Why not? It frees up the stove to make other holiday goodies! So easy!
Cooks for 2 hours on HIGH. Serves 6.
What you’ll need:
3 tablespoons olive oil
1 and 3/4 cup uncooked brown rice
3 and 1/2 Better than Bouillon chicken base dissolved in water and made according to package (may substitute with 28 oz. low-sodium chicken broth)
1 bunch scallions, sliced and diced
1/4 tsp salt
1 tsp dried basil
1/3 cup toasted pine nuts
How to cook it:
1. Toast pine nuts over med/ high heat, constantly moving them around in olive oil for a few minutes until browned. Set aside.
2. Toast rice over med/high heat for a few minutes until golden.
3. Place rice, broth, salt, scallions, and basil in crock pot.
4. Cover and cook on HIGH 2 hours or until liquid absorbs.
5. Stir in pine nuts and serve.
End Results:
The best rice I’ve ever eaten. I’ll never make it on the stove again! So worth the time. I served Jack and the Beanstalk Black-eye pea concoction over the rice. You could serve anything over it or just eat it plain. Delicious!
