The ingredients in these sounded so nutritious! This would be a GREAT recipe to make with kids. Tiny hands would have no problem with the folding and arranging and scooping. It takes a bit of pre-work, but they were delicious and filling and worth it!
A serving size for us was two rolls and a side vegetable. Serves about six. Cooks six hours. If you start dinner late in the crock pot, this would be the day to do it. Cook these on high, and they’ll be done in 2 hours!
What you’ll need:
1 large head of cabbage
1 tablespoon of olive oil
1 and 1/2 cups chopped onion
3 cups cooked pearl barley
3/4 cup feta cheese, already crumbled
1/2 cup raisins
3 tablespoons pine nuts
1 tablespoon dried parsley
1/2 teaspoon salt, divided
1/4 teaspoon pepper, divided
1/2 cup organic apple juice
1 tablespoon cider vinegar
1 can crushed tomatoes, undrained. (14.5 oz)
How to cook it:
1. Steam cabbage in a covered pot about 10 minutes. Be EXTREMELY careful getting it out of the pot. It is cumbersome and awkward and can easily burn you.
2. When the cabbage has cooled enough to touch, gently pull off 12 to 16 leaves. Kids can help with this part, if the cabbage is cool enough. If the leaves rip a little, they’ll still work.
3. Sautee onion in olive oil until translucent.
4. Toast the pine nuts.
5. Add barley, feta cheese, raisins, pine nuts, and half of the salt and pepper. Mix well and remove from heat.
6. Spread cabbage leaf on cutting board and place 1/3 to 1/2 cup of mixture into each leaf (depending how full you’d like them). Let the kids fold in all four sides and position them neatly in the crock pot.
7. Mix the rest of the salt, pepper, the apple juice, vinegar and tomatoes together and pour over cabbage rolls, making sure they all get covered. Warning: there will be splashing!
8. Cook on low for 6 hours.
End Result:
Loved it. Besides the fact I had to steam the cabbage and pre-cook the barley, everything else was cake, and quick! The food was alive with different flavors. Great way to sneak a vegetable in! Fun to make and fun to eat!

This was a tasty variation on the Polish halupki (which is cabbage rolls stuffed with ground beef and rice). We may have indulged in a little too much cabbage that night and if I remember correctly we ended up on opposite ends of the couch! I can’t wait to try this one again!!
