My aunt Pat asked if it was possible to make cake in the crock pot. I looked it up and honey, it’s been done! I would never have thought…..
I chose the cake I like most–carrot and found a “low-fat” recipe on food.com by Purdy Good Cook. I looked around the kitchen and said, “Let’s do it!”
What you’ll need:
6 egg whites, but I busted two of the yolks, so I had two full eggs in there.
1/2 cup nonfat sour cream
1/2 cup applesauce
1 teaspoon ground cinnamon
1 box of Betty Crocker Super Moist carrot cake mix (do not make as directed on box)
1/4 cup chopped walnuts
3 cups shredded carrots
How to make it:
1. The original recipe said to preheat the crock pot on high, but I didn’t. Feel free to preheat if you like.
2. Grease WELL with olive oil.
3. In mixing bowl with mixer on medium speed, beat egg whites, sour cream, apple sauce, cinnamon and cake mix together for two minutes.
4. Stir in walnuts and carrots with spatula. Mix well.
5. Pour batter into crock pot.
6. Place a paper towel on top of crock pot, placing lid on top of paper towel. Because I checked it often, the paper towel was soaked and I couldn’t get it to stay on the crock pot. I had to use two. It was a little frustrating, so, just be ready for that. I think it’s just to keep in the moisure in, but I have no idea what the paper towel was for.
7. I DID NOT cook it on high for the 1 and 1/2 hours it called for. The one and only review on food.com said she did and it burnt. She advised cooking it longer on low. So I cooked it for 2 and 1/2 hours on low. I checked it often. You should too. Not all crock pots cook equally.
8. Remove the crock from the crock pot. Remove lid and paper towel, and let cool for 10-15 minutes.
9. Run a knife around outside edge to loosen cake from crock pot.
10. Place a large serving plate upside down on top of crock pot. Holding slow cooker and plate firmly together, carefully flip the cake upside down. I could not get the darn thing to fall out of the crock pot when I flipped it upside down. I gave up, cut the cake into pieces and pulled it out with my hands. Only a bit of crumble. So, oil the crock well.
It will be hot, hot, hot so BE CAREFUL.
The food.com recipe suggested serving hot or chilled with vanilla ice cream. (Yum!)
End Result:
The recipe said it would be sweet enough that I wouldn’t need icing. I needed icing. Maybe I’ve gotten a little too used to store-bought. You know how loaded with sugar they are. I think the scoop of ice cream would be the way to go.
It did burn a little around the outer edge, but not much. I don’t know how to fix that, I cooked it on low. Any less time and the very middle would have been soggy. I used my 5 quart crock pot. It made a huge cake! 🙂
I slapped some cream cheese icing on there and ate it burnt edges and all. It still tasted good! Surprisingly, it wasn’t dry, thanks no doubt to Betty Crocker Super Moist cake mix. It was my first attempt, and I will most certainly try it again, probably a different recipe. I’d like to do it from scratch without the cake mix to see if it makes a difference.
Haven’t perfected making cake in the crock pot just yet, but I have faith I’ll get there! Stay tuned.

Amazing! I sold my Crockpot at a garage sale when I moved to this flat because it has such limited cupboard space! I wish I hadn’t – I’d love to try some of your recipes. The only thing I ever used it for was soup and now and then I’d try beans and they just wouldn’t cook in that thing!

That makes me sad to hear your beans wouldn’t cook. I know how frustrating that is. You have to leave those suckers in there forever. I’ll keep putting recipes up and maybe, just maybe, you’ll find another one at a garage sale. 🙂
And I’ll try to make more vegetarian ones too!
No space in my current kitchen for a Crockpot Jen! And my beans cook so well on top of the stove and I have a great gas stove in this flat. When I get a bigger flat, I’m sure a Crockpot will come my way – as did the last one – and I’ll try that carrot cake!

Wow, I’m impressed! My cake came out soggy in the middle, but it that’s how it was supposed to be. I always wondered if I could make a cake without burning the edges and avoiding the gooeyness. Absolutely! The chocolate gooeyness (if that’s a word) of the Molten Chocolate cake sucked me right in. That’s one I will try for sure. Just looking at the pictures make me want to jump right up and try and make it! Thank YOU for sharing. Haven’t quite perfected the crock pot cake yet, but I’m getting there!
