Remember in middle school when the lunch lady plopped a lump of “stuff” on your plate? Upon inspection, I could never decipher the ingredients… meat and maybe something else. To me, meat loaf conjured images of nasty school lunch. I never had any desire to try it.
Now that I’m grown, however, my taste buds are happier, healthier, more open-minded buds. And boy, was I wrong about meat loaf. My husband and I fought over the last piece.
Takes 5 hours to cook. Makes 6 to 8 servings.
What you’ll need:
2 pounds ground buffalo; less fat than other ground meat
1 envelope dry onion soup mix
1 cup ketchup; 1/2 cup to be used in the actual meatloaf, and 1/2 in the topping sauce
¼ cup water
¾ cup wheat germ–in order to change all my white foods to brown ones, and incorporate more whole grains.
1 large egg
1 cup low-fat shredded Cheddar cheese
1 tablespoon Worcestershire sauce
¼ teaspoon pepper
1 tablespoon light brown sugar
1 teaspoon mustard
How to cook it:
- Combine all ingredients except the mustard, sugar and 1/2 cup ketchup. Shape however you want. Most people shape into a “loaf”, I flattened mine like a pancake to see if it would cook faster, which it didn’t.
- Cook on high for 1 hour and then on low for another 3 hours. Pour off grease.
- Stir remaining ½ cup ketchup, brown sugar, and mustard together and spread over top of meat loaf like you ice a cupcake.
- Now cover and cook on low for just one more hour or until the meat loaf registers 160 degrees.
- Let it rest before serving.
End Result:
This was absolutely delicious. It was flavorful and filling, and brought happy sounds of “Mmmm” while being consumed. That always makes me feel good. I’ll make it again.
